Bernese Hazelnut Gingerbread is a sweet pastry consisting of an aromatic mass of ground hazelnuts, sugar, and egg whites. This marzipan-like hazelnut mixture is only baked very briefly so that it is crispy on the outside and still soft on the inside. Moreover, it contains neither flour nor water. Mostly they are cut out in the shape of a bear and painted with food coloring. Furthermore, this treat is gluten and lactose-free.
In this unique version, you won’t find many classic gingerbread ingredients with him. Honey, for example, contains very little, if any. The foundation stone for today’s Olo Marzipan O. Lohner AG was laid by the company’s founder Otto Lohner in Ostermundigen in 1933. The protected “olo” logo, well known in the trade, is derived from the first letters of his first name and surname.
Today, the factory has around 60 employees, with an output of some 2,000 tonnes of products per year. One of their best-known products is the classic orange marzipan carrot, which you can find on almost every carrot cake.
