The first step in the manufacturing process of Easter nougat egg is to caramelize the sugar in the copper kettle. Hence, simply relying on traditional confectioner’s skill. Afterward, the chopped or finely flaked almonds – always freshly prepared in-house – are added while stirring carefully, yet vigorously. Then you put hot paste onto a stone slab, cool, flat, and mold it to the traditional bunny, egg or piglet shapes. Finally, the nougat figures have a pretty appearance. A steady hand lends each of the nougat animals its cute eyes and the eggs their attractive sugar glaze.
