Hacienda San Pablo

The Hacienda San Pablo is located in a remarkable landscape in the middle of the buffer zone of a rainforest reserve. At Hacienda San Pablo, all coffee is grown in an organic system. Organic fertilizers such as infusions with lemongrass and ginger are primarily used. The high degree of innovation stands out: In the last cuppings, lots at Finca San Pablo scored a sensational 90 points.

In 1915, Pablo Melghem built the Hacienda San Pablo in Santa Ana. Melghem has been growing coffee since the beginning. But since the region had a high demand for sweet brown sugar, he mainly grew sugar cane. After his death, the hacienda became the property of his wife. She transferred this to her son Rolando Melghem.

The story behind espresso coffee beans

Rolando had already worked on various coffee farms in El Salvador and learned a lot about coffee production. His new form of business management and processing as well as his experience in coffee cultivation were very quickly reflected in the high quality of the coffee. He quickly became known in the Marcala region for his outstanding Bourbon variety. Even after his death, this variety continued to be grown at Hacienda San Pablo.

Only after the complete infestation with coffee leaf rust in 2012 did this variety almost completely disappear. Furthermore, the Hacienda San Pablo is now managed by the 3rd generation of Montgomery Melghem and is being improved bit by bit with new processing methods. However, Montgomery preserves the legacy of the unique coffee on his farm while promoting diversification and thriftiness.
